Black Beans

1 onion -- chopped
1 clove garlic
2 tablespoons oil
1 jalapeno pepper -- chopped
I thai chile -- chopped
1 teaspoon chili powder
1 teaspoon cumin powder
1 cup tomato -- chopped
2 cans black beans
1 1/2 teaspoons salt
1 teaspoon oregano

Saute onion and garlic clove in oil until onion is soft. Add peppers and spices. Saute another 2 or 3 minutes. Add tomatoes. Rinse and drain beans and add with salt and oregano.Simmer 30 minutes.

Serves 4. 3 points a serving.

Low WW Points All Sides Lunch
I made three things for lunch today that were seriously low in WW points and yet very good and filling.

2 small heads broccoli
3 med shallots, chopped
salt, pepper, red pepper flakes
1 tsp oil

I sauteed the shallots in the oil and then added the spices. Then, I added maybe 1/2 cup water and the broccoli. I covered it and steamed the broccoli under they were tender, maybe five minutes.

1 bunch spinach, chopped
4 med shallots,chopped
2 garlic cloves, chopped
salt, pepper, red pepper flakes, allspice
4 Tbl fat-free cream cheese
2 Tbl fat-free sour cream
1 tsp oil

I sauteed the shallots and garlic in the oil and added the spices. Then, I added a few tablespoons of water and let it simmer for a minute. Then, I added the spinach, and stirred it until it was wilty (maybe 3-4 minutes). Then, I added the cream cheese and sour cream a tablespoon at a time and stirred it until it was all melted together.

Indian potatoes and spinach
This was pretty random. I based it, sort of, on the Indian dish I posted about a while back.

4 med potatoes (red or klondike gold)
1 red onion, chopped
1 tsp oil
2 tsp garlic-ginger paste
2 tsp cumin
1 tsp tumeric
1 tsp coriander
1 tsp cardamon
salt and pepper
1 bunch spinach, chopped
1 small can tomato puree
1 Tbl ketchup

I cut the potatoes into small pieces (about 1/2 inches) and boiled until tender. Meanwhile, I sauteed the onion in the oil until translucent. Then, I added the garlic-ginger paste and the spices. I added a few tablespoons of water and stirred it. Once the water was gone, I added the spinach and let it cook and wilt a bit. Then, I added the potatoes, the puree, and the ketchup. I stirred it all together and let it heat up, and seasoned to taste.
